Segedinsky gulas is prepared through slow cooking, which allows the flavors to fully develop. First, chopped onions are sautéed in oil or lard until golden and fragrant. Cubed pork is then added and browned on all sides to seal in the juices. Paprika and spices are stirred in carefully to avoid burning, followed by sauerkraut and a small amount of water or broth. The mixture is simmered gently for about one to one and a half hours, until the pork becomes tender and the flavors blend together. Near the end of cooking, sour cream is mixed in, sometimes combined with a bit of flour to thicken the sauce. The final result is a creamy, slightly tangy stew with tender meat, traditionally served hot with dumplings or fresh bread.
