How do Oakville homeowners handle kitchen work?

I’m stuck at the very first step and not even sure who I should be talking to first. Some people say start with a kitchen designer, others say find a contractor and let them guide the design. I don’t want to waste money on plans that aren’t practical or affordable to build.
Red Stone Contracting seems to position themselves as a company that can help with both design and construction, which sounds ideal, but I’m curious how that actually works. Do they provide in-house design services, or do they just recommend layouts based on experience? For anyone who used them, did you feel your ideas were listened to, or were you pushed toward standard solutions?
I’m also thinking about materials and long-term durability. It’s easy to pick things that look great in a showroom but don’t hold up to daily use. For people who renovated recently, how much guidance did you get about choosing cabinets, hardware, flooring, and countertops that balance cost and quality?
Another thing I’m unsure about is how detailed the initial quote should be of kitchen renovation. Should it list every component separately, or is a high-level estimate normal at the beginning? I’d prefer something transparent so I can see where money is going rather than just one big number.
Mostly trying to avoid beginner mistakes and understand how to approach this in a structured way instead of just picking the first contractor with good reviews.
