What Is Al Pastor?

alpastor is a popular Mexican dish made with marinated pork. It is often used as a filling for tacos. The meat is cooked on a vertical spit, like shawarma or doner kebab. This method came from Lebanese immigrants who brought their cooking style to Mexico. Mexicans added their own spices and made it their own unique dish.

How It’s Made

Al Pastor is made by slicing pork into thin pieces. These pieces are soaked in a marinade made from chili peppers, pineapple juice, vinegar, garlic, and spices like cumin and oregano. The red color comes from a spice called achiote.

Once the meat is marinated, it is stacked on a spit (called a trompo) and cooked slowly. A pineapple is usually placed on top of the spit. The juice from the pineapple drips down onto the meat, adding sweetness and helping to make the meat tender. As the meat cooks, it is sliced off and served hot.

How It’s Eaten

The most popular way to eat Al Pastor is in tacos. The sliced pork is placed on a small corn tortilla and topped with chopped onions, fresh cilantro, salsa, and small pieces of pineapple. Some people add a squeeze of lime juice for extra flavor.

You can also use Al Pastor meat in burritos, quesadillas, or even on nachos.

People love Al Pastor because it is full of flavor. It’s sweet, spicy, smoky, and juicy all at the same time. It’s also a fun street food that brings people together.

Even if you don’t have a spit at home, you can still make Al Pastor by cooking the marinated meat in the oven or on the grill.
